Ingredients
  

  • 1 ½ pounds brussel sprouts halved
  • 4 slices bacon chopped
  • 1 tablespoon olive oil
  • 2 tablespoons real maple syrup
  • Salt and pepper to taste
  • A pinch of red pepper flakes optional for those into spice!

Instructions
 

  • Begin by preheating your oven to 400°F (200°C).
  • In a large bowl, toss the halved brussel sprouts with olive oil, salt, and pepper until they are coated evenly.
  • Spread the brussel sprouts onto a baking sheet in a single layer.
  • Roast in the oven for about 20–25 minutes or until they’re tender and starting to brown.
  • In a skillet, cook the bacon over medium heat until it’s crispy.
  • Once cooked, transfer the bacon to a paper towel to drain the excess fat.
  • In the same skillet, pour off the bacon fat, leaving behind a tablespoon or so to coat the pan.
  • Add the roasted brussel sprouts to the skillet along with the bacon fat, stirring to coat.
  • Drizzle the maple syrup over the top, and continue to cook for an additional 2-3 minutes until they’re nicely glazed.
  • Transfer to a serving dish, sprinkle with the crispy bacon bits, and red pepper flakes if using.

Notes

  • Use real maple syrup for its rich, complex sweet flavor. It’s the star of the dish after all!
  • Balsamic glaze can be an excellent alternative for those looking for a tangy undertone.
  • Cook the sprouts until they caramelize slightly, bringing out their inherent sweetness while maintaining a bit of crunch.
