Ingredients
  

  • 2 cups cooked chicken shredded
  • ½ cup breadcrumbs plain or seasoned
  • 1 egg beaten
  • 1 medium potato boiled and mashed
  • 1 small onion finely chopped
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley optional

Instructions
 

  • In a mixing bowl, combine the shredded chicken, mashed potato, onion, garlic powder, salt, pepper, and parsley until well mixed.
  • Chill the mixture in the fridge for about 30 minutes to firm up.
  • Shape the chilled mixture into small croquettes or patties.
  • Dip each croquette in the beaten egg, then roll it in breadcrumbs until fully coated.
  • Preheat your air fryer to 375°F.
  • Spray the air fryer basket with a little cooking spray and place the croquettes in a single layer.
  • Cook for 10-12 minutes, flipping halfway through, until they're golden brown and crispy.
  • Allow them to cool slightly before serving, and enjoy!

Notes

  • To achieve extra crunch, you might consider double-dipping in egg and breadcrumbs for a thicker crust!
  • Adjust the cook time for smaller or larger croquettes accordingly—nobody wants a raw center!
