Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1.5 cups orzo dry
  • 1 can crushed tomatoes 14 oz
  • 2.5 cups vegetable broth
  • 2 cups fresh spinach lightly chopped
  • ½ cup Parmesan cheese grated
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
