Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • ½ cup cornstarch
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Sauce:

  • ½ cup pineapple juice
  • ¼ cup rice vinegar
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions
 

  • Preheat your air fryer to 375°F.
  • Season the chicken pieces with salt and pepper.
  • Coat the chicken pieces in cornstarch, then dip into beaten eggs, and finally coat with breadcrumbs.
  • Arrange the coated chicken pieces in a single layer in the air fryer basket.
  • Air fry for 12-15 minutes, shaking the basket halfway through, until the chicken is golden brown and crispy.
  • While the chicken is cooking, prepare the sauce. In a small saucepan over medium heat, combine pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce, stirring until smooth.
  • Bring the sauce to a simmer, then add the cornstarch mixture. Continue stirring until the sauce thickens.
  • Once the chicken is done and crispy, toss it in the sweet and sour sauce until evenly coated.
  • Serve immediately, garnished with chopped green onions or sesame seeds if desired.
